makes 2 drinks
what you need
- 4 cups coconut milk ice cubes
- 4 oz pineapple juice
- 2-4 oz tequila (i used 4 oz Casamigos Reposado)
- 2 oz simple syrup
- fresh lime slices
- 2 tbsp cane sugar + zest of one lime for rim
- 2 pineapple wedges + 2 stems from the crown
what you do
- make your coconut ice cubes the night before, use the light or regular kind, not cream
- mix cane sugar + lime zest in a small plate
- to a blender, add coconut cubes, pineapple juice, tequila + simple syrup
- blend until everything is a smooth slush
- rim glasses with fresh lime + roll edges in sugar lime mixture
- divide slush into your two favorite glasses
- garnish with fresh pineapple wedges + stems
- enjoy!
NOTES
// simple syrup
add 1 cup cane sugar + 1 cup water to a small pot and bring to simmer on low. once all the sugar has dissolved, let syrup cool for 15-20 minutes before transferring to a bottle. keep in fridge for up to 3 weeks.
