sweet + smokey with a little bit of heat. the perfect summer sip.
makes 2 drinks
what you need
- 2 rosemary sprigs
- fresh lime slices
- tajin for rim
- two large ice rocks
- 1-2 oz tequila per serving (we love Teremana or Casamigos Reposado)
- 2 oz simple syrup – see notes below
- 4 oz pineapple juice
- sparkling water to top
what you do
- wash + dry rosemary sprigs
- smoke the rosemary for a few seconds using a lighter
- place glass over smoked rosemary sprig for 2-3 minutes to infuse
- rim glasses with fresh lime + roll edges in tajin seasoning
- add one large ice rock to each glass
- add tequila + 1 oz simple syrup + 2 oz pineapple juice to each glass. stir gently to mix
- top with sparkling water + garnish with rosemary + lime wheels

NOTES
// simple syrup
add 1 cup cane sugar + 1 cup water to a small pot and bring to simmer on low. once all the sugar has dissolved, let syrup cool for 15-20 minutes before transferring to a bottle. keep in fridge for up to 3 weeks.
